Mother’s Day is all about mom’s favorite things, right? And I know that my mom – and mother in law – loves sweets. Since it’s been so warm lately I knew she’d appreciate something cool if she were down here (don’t worry mom, we can make these again!).

So when I headed out to Smart & Final to pick up some ingredients for an awesome dessert to serve on Mother’s Day, I knew that First Street ice cream would be the perfect base for any dish.

I thought bringing my husband along with me as we shopped would be a bad idea but he inspired this dish when he asked if he could pick up some chocolate chip cookies too. Genius!! Why not make ice cream sandwiches?

Lets not just stop there… lets make them the Ultimate Ice Cream Cookie Sandwich! So we grabbed some First Street Cookies and Cream ice cream, First Street chocolate chip cookies, and a bag of mini chocolate chips (but were considering a huge bottle of First Street assorted nonpareils – they just weren’t ultimate enough) and headed home.

Since the ice cream was the perfect temperature when we got home – just slightly melted and soft – I got to assembling the sandwiches so I could get them into the freezer to set.

I am sure that the moms in your life will love this delicious ice cream treat after your meal on Mother’s Day! Plus, you can get the kids involved and have them assemble this easy dessert for the moms!

The Ultimate First Street Ice Cream Cookie Sandwich

What You’ll Need:

  • 1 gallon of First Street Cookies & Cream ice cream
  • 1 package of First Street chocolate chip cookies
  • mini chocolate chips

What You Do:

First Street Ice Cream Cookie Sandwich #ChooseSmart  scoop onto cookie

1. Take a scoop of ice cream and set it down on the flat side of one of the cookies.

2. Place another cookie right side up on top and smush down just a bit.

First Street Ice Cream Cookie Sandwich #ChooseSmart  roll into mini chocolate chips (or sprinkles)

3. Roll sides of sandwich into chocolate chips.

4. Place sandwiches on a tray and repeat until you have as many as you need. Make sure to store in the freezer so they don’t melt.

5. Serve to your family and enjoy!
